Head Chef Paul Parillo
Paul grew up in a restaurant family. After a foray into the music business, he went back to his roots and earned a culinary degree. Paul worked for several years as a chef in New York City, most notably at Tribeca Grill and Corporate Chef Catering. He later returned to upstate NY and took the Executive Chef position at Crossroads Brewing Co. in 2012. Paul and his cooking have been featured in Hudson Valley Magazine, Hudson Valley Mercantile and on the Cooking Channel's Eat St. He opened Edible Roots with his wife Lindsay in 2017.
Lindsay was born in NYC and raised in the Hudson Valley, always surrounded by the world's finest edible ingredients . She has over 20 combined years of restaurant and managerial experience, most notably at Roth Steakhouse in New York City, and at Club Helsinki and Etsy in Hudson, NY. While working alongside the area's brightest creative minds, she developed her own unique style and vision for Edible Roots' warm and visually beautiful events.
Sous Chef Nick Ferriere
Nick was determined to be a chef at a young age, earning a Culinary Arts degree not long after graduating high school. His wide range of culinary experience includes cooking at the New York State Governor's Mansion, and also at some of the Hudson Valley and Capital District's top food, beer and wine festivals. He worked closely with Paul as Sous Chef at Crossroads Brewery before also serving as their Head Chef. Nick is now an integral part of the team at Edible Roots, bringing a well rounded focus to their unique events.
