Chef Paul Parillo
Paul grew up in a restaurant family. After a foray into the music business, he went back to his roots and earned a culinary degree. He worked for several years as a chef in New York City, most notably at Tribeca Grill and Corporate Chef Catering. He later returned to upstate NY and took the Executive Chef position at Crossroads Brewing Co., before opening Edible Roots with his wife Lindsay in 2017.
Lindsay grew up surrounded by the world's finest edible ingredients in the Hudson River Valley. She has over 20 combined years of restaurant and managerial experience, most notably at Roth Steakhouse in New York City, and at Club Helsinki and Etsy in Hudson, NY. While working alongside the area's brightest creative minds, she developed her own unique style and vision for Edible Roots' warm and visually beautiful events.
